Simply switching some ingredients can turn high-fat family favorites into healthy dishes. In baked goods, use applesauce or prune puree for half of the called-for butter, shortening or oil. If a recipe calls for 1 cup of shredded cheddar cheese, use 1/2 cup instead. When making casseroles, scale back on meat and increase the amount of vegetables.
